Bioprotection on Chardonnay Grape: Limits and Impacts of Settling Parameters

Background and Aims. If bioprotection has already been proven to limit the development of spoilage flora on musts, its effectiveness against oxidation depends winemaking process. To optimize application, this study analyzed evolution chemical composition bioprotected musts wines, according different settling routes. Their impacts organoleptic characteristics wines were also studied. Methods Results. A must was subjected 6 maceration routes before AF (triplicates), varying duration temperature parameters. value ≤12°C main factor independently which allowed a good implantation bioprotectant. An increase at 12°C led browning must, without significant effect final color wine, felt as more “floral,” with length in mouth. Conclusions. The bioprotectant sensory profile wine guaranteed values lower than 12°C. Significance Study. This participates improvement management white winemaking, guarantee positive impact prefermentation sulphites wines.
